Tasting Note
Adam Bilbey: 41hl/hectare. 55% of crop. 60% new oak. 62% Cabernet Sauvignon, 36% Merlot, 2% Petit Verdot. Sumptuous on the nose; fresh and fragrant. Crushed red and black fruit, like a summer pudding. Blackberry, cherry, raspberry. A hint of anise and spice. Seamless palate with ripe red and black berry fruit. Sweet and supple tannins that works with the fresh and crunchy acid. This gives the wine a tension and back bone to balance the flesh of fruit. A salinity and spice to the finish. If this puts on weight it could be exceptional.
