We love Champagne and wholeheartedly agree with Madame Lily Bollinger, who said: "I drink it when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not hungry and I drink it when I am. Otherwise I never touch it, unless I'm thirsty."

While Billecart (we cannot call them BS!) is best known for it’s great Rose, the “straight” NV is also top class and, to my mind, getting better and better. The last bottle we tasted (in celebration of Eli conducting his first Sotheby’s auction) was very classy with enough depth and concentration, but still being racy and fine. This is serious NV Champagne and becoming a regular and favorite at work and at home. If you have not had a bottle recently, it is definitely worth trying. JR, 06/11

P2 is the new label for Dom Pérignon`s Oenotheque wines. These wines have undergone much longer lees aging than their vintage equivalents, which results in additional freshness and complexity. P2 is shorthand for `second plenitude`, reflecting the house`s philosophy that champagne experiences three different but equally wonderful stages in aging, captured in three different Dom Pérignon releases: the `regular` vintage wines, which have been aged on the lees for 7-8 years before disgorgement; the P2 wines which see 12-14 years on the lees; and finally the even rarer P3 wines, which undergo more than 20 years` lees aging.
