Stellar Cabernet from Peter Michael

Perched high up in the northern reaches of Napa Valley is the fastness of Peter Michael, in the small town of Calistoga. It is here that the British entrepreneur established his now celebrated brand in 1982. The heart of the estate is the Knights Valley Ranch, from which is sourced the estate's flagship red wine: Les Pavots, a Cabernet Sauvignon-dominant blend.

Les Pavots is made with a European sensibility, meaning that the wine majors on freshness and balance rather than relying on the power so typical of many Napa Cabernets. And yet the fruit concentration is classically Californian: a gorgeous melding of cultures. Les Pavots always takes 5-7 years after the vintage to really come alive, and when it does, the wine seduces with its dark fruit and garrigue herb notes, and its effortless, velvety texture. Esprit des Pavots is the second wine of Les Pavots and offers an earlier drinking style.

Finally, a relative newcomer to the lineup is Au Paradis, a Cabernet sourced from an entirely different part of Napa, in Oakville. This is a supple, generous expression of Napa with the valley floor's characteristic depth and fruitiness.
