In recent years, the wines of Frédéric Savart have become celebrated among lovers of terroir-expressive, grower Champagne. Farming just four hectares of vines, these rare wines are hedonistic, with overt use of oak, adding a rich, spicy quality. The blend is usually Pinot Noir-dominant, as befits Savart's holdings in the Montagne de Reims.
Ouverture is the place to start with Savart; a 100% Pinot Noir blend of three vintages. Next up is L’Accomplie – a drier style, made from only two vintages. Bulle de Rosé is a sumptuous rosé from a single village, and the Haute Couture is the blending of 100% Chardonnay grapes coming from two villages, classified as Grand Cru in the Côte des Blancs: Le Mesnil and Oger.
In addition to the house wines, a new collaboration with Drémont Père et Fils has resulted in a series of wines that showcase the region's various terroirs. Ephémère 011 is Pinot Noir from the rarely seen Petite Montagne de Reims.
