Droin and Dauvissat

With a cooler climate and its unique Kimmeridgian clay soils, Chablis is known as one of the world’s most distinctive wine regions and produces a very individual expression of the Chardonnay grape variety. The finest Chablis shows energy, intensity and a touch of austerity of their own. Their lovely minerality and freshness make them such a perfect counter to the humidity that hits us in the early summer months in Hong Kong. I recommend two of our favourite producers from the region: Droin and Dauvissat. The wines that I select for this offer are below HKD1,000  and offer great value and quality.

Droin
One of our best-selling producers, the Droin family has been making Chablis since 1620. This is one of my go-to producers and their wines are perfect examples of the iconic style of Chablis. Their basic Chablis wine is great as an aperitive. The premier crus Montmains and Montee de Tonnerre show good depth and intensity, that could accompany any white meat, seafood and perfect with oysters! Montmains is more generous in style and Montee de Tonnerre offers layers of complexity, often regarded as rivaling the grand crus. 

Dauvissat
Dauvissat is making some of the most intense and unique Chablis in the region. They bring extra dimension and added layers of depth and complexities to their wines other than the precision and purity that all good Chablis shows. Even their village level wines can offer great drinking pleasure and longevity. I have enjoyed their village level Chablis 2016 recently and am absolutely a fan. It is refreshing and undoubtedly energetic. Their top premier cru Forest impressed me a lot with its vibrancy and expressiveness. It is my top choice in this price range.
