Christophe Perrot-Minot is at the helm of this excellent domaine in Morey St. Denis, although the domaine does not make very many wines from its home village. The attention is focused on neighboring Gevrey-Chambertin, where Christophe enjoys holdings in Charmes and Mazoyères-Chambertin. These are consistently stunning wines. He also purchases grapes from the three Grands Crus of Chambertin, Chambertin-Clos de Bèze and Chapelle-Chambertin. And there is no fall-off in quality here; the Chambertin and the Bèze both among the best of any producer.
Winemaking at the domaine is geared towards finesse and detail; only 20% of new oak is ever used, and there is always a portion of whole cluster fruit included. Christophe also experiments with glass ‘Wineglobes’ for a small proportion of the aging process. This oxygen-free environment helps ensure bright, fresh wines. An unusual technique, but the result is indisputable: these are brilliant examples of the Chambertin Grands Crus.
